I never noticed any frame rate problems on the 360 when I was playing it. The PS3 does have sharper loooking textures and according to this better frame-rate, but like I said it was never a problem.

I have played the demo and I gotta say I'am impressed, Bioware really did a great job with the PS3 version.

Yeah, dropping a frame or two for a split second means nothing, you can barely notice it. I was surprised though when the ps3 version would jump up to like 46fps.

Even though the PS3 version features higher resolution visuals and tighter shadows than on Xbox 360 , it's lacking in effects like anti-aliasing and normal-mapping.
So basically both versions have their pros and cons.

The damn frame rate is unlocked. Makes the game feel A LOT more jittery and unresponsive even if it runs at 50FPS. The sudden jump from 50FPS to 30FPS is really bad. They really need to cap the frame rate otherwise, for me, it'll just feel very inconsistent, affect my game play, and show even more screen tearing (unlocked Bioshock frame rates anyone?).
I was suspecting that this is a very old build considering even the FMV was tearing up the ass more than the gameplay!

One version visually isn't better than the other. They are just different. You will notice changes in effects and changes in lighting sources. But it isn't major.

The jumps in FPS on the PS3 version only appears to happen when you are storming down a hallway or you are about to go into the next room. Kind of odd, I prefer a consistant framerate myself.
