Street Fighter is the best fighting game out arguably.
But, the new Mortal Kombat Rebirth movie is looking pretty rad.

Mortal Kombat 4 was the last good Mortal Kombat. The others are personal preference.

Ultimate MK 3 and Trilogy were the last two I really liked. I didn't really care for it after it went 3D.
